Ground Beef Tacos


This easy taco recipe is something I love to make weekly. You can interchange ingredients with what you have fresh and available to you. There is no wrong way! Here are my favorite ingredients for ground meat tacos:

Ingredients

  • 1 pound ground beef

    • I like to get the highest quality ingredients. Look for organic grass-fed and grass-finish if available

  • 1 Sieta Mild or Hot taco seasoning packet

    • I like their clean ingredients. You can also use a homemade version with cumin, garlic powder, salt and pepper

  • 1 small or 1/2 large sweet onion, peeled and chopped

  • 2 tbsp olive oil or avocado oil

  • Organic pepper jack cheese

  • Organic corn tortillas (I love Food for Life sprouted corn tortillas, easy digestion and whole ingredients)

  • Organic baby tomatoes, chop in half

  • 1/2 cup 0% fat Greek yogurt (Fage is my go-to)

  • 2 Tbsp sriracha (I prefer Yellowbird Agave Sriracha)

  • Fresh cilantro (fresh herbs are a game changer!)

Instructions

  1. Pull out meat to sit at room temperature for approx 30 min-1 hour from fridge temperature. Only do this with red meat, it helps relax the muscle and be more tender. Heat skillet (I use my cast iron skillet for everything) with 2 tbsp olive oil or avocado oil on medium

  2. Add chopped sweet onion to pan when it starts to warm up, would be hot to the touch

  3. Add ground meat.

  4. Add 1/2 seasoning packet or as desired. Add the whole packet for more kick.

  5. Stir meat until cooked thoroughly and brown (no pink).

  6. Warm tortillas in the oven or stovetop. I like to drizzle oil and add shredded cheese to tortillas and put in the oven at 350 until the cheese melts (4-5 minutes).

  7. Once the tortillas are ready, top with cooked meat.

  8. Mix Greek yogurt with sriracha. Add a dollop to the tacos.

  9. Add 4-5 halved tomato slices. Garnish with washed and chopped cilantro.

  10. Enjoy!
